Ramzan Nombu Kanji (also known as Nombu Kanji or Seeraga Samba Kanji) is a flavorful and hearty porridge enjoyed during the holy month of Ramadan, especially for Iftar (the evening meal to break the fast).
Here's a simple recipe to prepare this special dish at home.
Ingredients:
- Seeraga Samba rice – 1 cup (if unavailable, you can use any small-grained rice like Sona Masuri)
- Water – 4-5 cups (adjust based on desired consistency)
- Coconut milk – ½ cup (optional, for richness)
- Shredded coconut – 2 tbsp (optional, for extra flavor)
- Ghee (clarified butter) – 2 tbsp
- Onion – 1, finely chopped
- Ginger – 1 inch, grated
- Garlic – 2-3 cloves, minced (optional)
- Green chilies – 2, slit (adjust to taste)
- Cinnamon stick – 1 small piece
- Cloves – 2-3
- Cardamom pods – 2-3
- Fennel seeds – 1 tsp
- Turmeric powder – ½ tsp
- Salt – to taste
- Pepper – ½ tsp (adjust to taste)
- Fresh coriander leaves – for garnish
For Meat Option (optional):
- Chicken (or mutton) – 200g, cut into small pieces (you can skip this for a vegetarian version)
- Curry leaves – 1 sprig
- Garam masala powder – 1 tsp
Instructions:
Step 1: Cook the Rice
- Wash the rice thoroughly and soak it in water for about 30 minutes (this helps the rice cook faster and gives it a softer texture).
- Drain the rice and keep it aside.
Step 2: Prepare the Base
- In a large pot, heat ghee. Add the fennel seeds, cinnamon, cardamom, cloves, and curry leaves (if using). Sauté for about a minute until the spices release their aroma.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger, garlic, and green chilies. Cook for another 1-2 minutes, stirring occasionally.
Step 3: Add Meat (Optional)
- If you're adding meat, now is the time. Add chicken or mutton pieces and sauté until they are browned and cooked through. Season with salt and garam masala (if using).
- If you're skipping the meat, move to the next step.
Step 4: Add Rice and Water
- Add the soaked and drained rice to the pot, and stir it well for a couple of minutes to mix with the spices.
- Pour in water (about 4-5 cups, depending on how runny or thick you prefer the porridge).
- Add a pinch of turmeric powder for color and taste. Stir everything together.
- Bring the mixture to a boil and then reduce the heat to a simmer. Let it cook uncovered for about 20-25 minutes, or until the rice is cooked and soft. Stir occasionally.
Step 5: Add Coconut Milk (Optional)
- Once the rice is cooked and the porridge has thickened, add coconut milk and stir well. You can also add shredded coconut at this point for extra flavor.
- Let it cook for another 5 minutes, allowing the flavors to meld together.
Step 6: Final Seasoning
- Taste and adjust the salt and pepper.
- Garnish with freshly chopped coriander leaves before serving.
Serving:
Serve the Ramzan Nombu Kanji hot, ideally with dates and roasted nuts. It’s a fulfilling dish, perfect for Iftar after a long day of fasting.
Optional Additions:
- You can add raisins, cashews, or almonds for a richer, nuttier flavor.
- If you want a spicier version, you can add some red chili powder or extra green chilies.
